Fresh Potato Salad

Good New Year everyone. I am still a bit on a holiday mode and will be back in Bergen on Friday.  My blog has been on a holiday mode as well which you have probably noticed. Hopefully home coming will change this. :)

This year I am trying to keep my recipes simple and highlight the ingredients and their natural flavors. In the future I would like to use more seasonal veggies when cooking and leave the meat only for special occasions. Let’s see how I will manage.

Good example of this  new idea is this potato salad with a twist of fresh lemon. Simple ingredients with a tasty sauce will do the trick.

Ingredients for 4-6 persons:

8 mid-sized potatoes

1 red onion

60 grams of capers

handful of fresh basil

grounded black pepper on top

Lemon-olive oil sauce:

6 table spoons lemon juice

3/4 dl extra virgin olive oil

1 table spoon white wine vinegar

1 table spoon honey

1 tea spoons honey mustard (for example honey-Dijon)

1 tea spoon salt

1. First boil the potatoes until they are ripe. Peel and cut into slices.
2. Cut onion into slices and chop fresh basil.
3. Place potatoes to a big plate and sprinkle sliced onions and capers on top.
4. Prepare the sauce. Mix all the ingredients together and stir well.
5. Pour sauce on top of the potatoes, onion slices and capers.
6. Sprinkle fresh basil and ground black pepper on top.
7. Place into fridge for a couple of hours and let the potatoes soak the flavors.
8. Serve and enjoy!
